“Elios” was born from the passion of these two young Sicilian friends. With a true love for their land, they joined together to develop their families’ farms and to bring them to their full potential after finishing their university studies. The farm and vineyards are located near Palermo in north west Sicily. Along with olive groves and an apiary, they grow the native Sicilian grapes Grillo, Catarratto, Zibibbo and Nero d’Avola on their organic vineyards.
Elios prides itself on making minimum intervention, low sulfite wines with native Sicilian, organic grapes grown between Alcamo, Camporeale and Monreale; areas all located in the north-west part of Sicily. The wine making focuses on respect for the varietal, and aims to deliver an easy drinking, approachable style.

White | Grillo
This white wine is made from Grillo grapes grown in calcereous soils located in the area of Camporeale. On the nose, it smells of fresh grape berries, with hints of green tea leaves and baslcamic notes, and some Mediterranean herbs aromas such as sage, thyme and mint. On the palate, it has a pleasant freshness and a special minerality that leads to a remarkable drinkability.
Pairing suggestion: Perfect to pair with fresh fish dishes and vegetables.

Orange | Catarratto, Grillo, Zibibbo
This wine is a blend of Catarratto grown in the area of Monreale, and Grillo and Zibibbo from Alcamo. The Catarratto adds acidity to the blend, the Grillo adds structure and the Zibibbo adds the aromas. All the grapes macerate for 20 days on the skins and aged for 6 months over the lees. This bright happy orange wine has notes of zingy apricot, orange blossoms, rose petals and seville orange marmalade on the nose. On the palate it is well-structured, with a light tannic grip. The good level of acidity gives the wine a special freshness.
Pairing suggestion: Pair this orange wine with boiled artichokes with anchovy-and-garlic butter. Oven baked salmon with capers and hard cheeses boards are also excellent pairings.

Red | Nero d’Avola
This red wine is made with Nero d’Avola grapes, one Siciliy’s most popular grapes, and aged for 8 months in chestnut barrels. Elios’ Modus Bibendi Rosso is unique in style: it’s a lighter and more aromatic version of the grape. On the nose, it smells of fresh red fruit with hints of almonds and cloves. On the palate, it has a great acidity and smooth and soft tannins.
Pairing suggestion: Pair this Nero d’Avola with tomato-based dishes such as pizza and pasta.

Red | Nerello Mascalese
‘Glou Glou’ is a light red made from Nerello Mascalese grapes macerated only for 1 day on the skins and fermented exclusively in stainless steel tanks. This results in an uncomplicated, thirst-quenching red perfect to ‘snack-on’. It’s fresh, savoury and mineral, with aromas of fresh red fruits such as cherries and strawberries on the nose, and a nice combination of spices.
Pairing suggestion: enjoy Elios’ Glou Glou by the glass or with a charcuterie board.

After the harvest, which takes place very early in the morning, the grapes stay on the skins for about 8 hours.
On the nose, Réva Grey has flinty notes that intermingle with hints of passionfruit, citrus and sage. On the palate is it bold, lively and fresh, with a crisp acidity.
