One of the many things I love about the Languedoc region is that there are always so many new wines to taste, things to learn, sub-regions to explore, and the like.
Speaking of which, please allow me introduce you to the relatively small (500 hectares) region of Cabardès, just northwest of one of my favourite spots upon this planet, Carcassonne. Being located on the Languedoc region’s border, the AOP allows for the inclusion of Merlot, Cabernet Franc, and Cabernet Sauvignon, making for some truly unique blends, many of which are utterly fanscinating.
Earlier this year we spoke with Vigneron Olivier Ramé from Maison Ventenac, the biggest player in this rapidly evolving sub-region of the Languedoc.
