A few months ago we joined Two Sisters Winemaker Adam Pearce for a tasting of the newly-bottled “Senza” Cabernet Franc.

Two Sisters produced a mere two barrels of this rather special wine, so it is not available to the general public, but can be found at a handful of top restaurants in Niagara, Ottawa, and Toronto, as well as through the Two Sisters wine club:

Niagara  : Kitchen 76

Toronto : One, Oretta, TOCA (Ritz-Carlton), Montecito

Ottawa : The Shore Club, Restaurant E18hteen, Pomeroy House, and The Charlotte Wine Bar @ Pure Kitchen

“From the Italian term ‘without’, Senza was fermented using local yeasts and simply finished, without the addition of sulphites, fining or filtering. Emerged from a small batch of only two barrels, Senza is a wine that more naturally reflects the essence of how this varietal flourishes in our Niagara River terroir. Senza is notably soft and succulent, redolent with layers of blueberry, beetroot, and blood orange, while offering a leafy, lively disposition. The tannins are silky but long, having aged for 18 months in 100% new French oak.

It’s a pretty special wine that will certainly reward some long-term cellaring. I’d highly recommend that you try to track some down if you can.
