2022 Baudouin Millet Chablis, France (Alcohol 12.5%, Residual Sugar 2 g/l) LCBO Vintages $33.90 (750ml glass bottle)

There’s something about this particular Chablis that really took my fancy. While it displayed the crisp acidity and prominent minerality that define classic Chablis, there’s also some absolutely gorgeous pure fruit here that really tempers any austerity; the balance between these two facets of the wine is most impressive. The wine sees not even a glimpse of oak barrel, simply fermenting and setting in stainless steel and enamelled concrete vats.

The nose gives off gentle but defined aromatics of lemon, green apple, pear, and peach alongside a delicate florality of white flowers and a whiff of flint. The dry and elegant palate is medium-bodied, with vigorous acidity and that unmistakable chalky minerality that only comes from the region’s Kimmeridgian soils. Alongside all of this finesse is a beautifully clean fruit character that really elevates this wine to a thing of considerable beauty.

Drink with grilled river or lake fish, garlic shrimp, or roast chicken with herbs.
