The other week at the recent i4C symposium I was simply delighted to discover that I’d once again have the opportunity to sit down and have a chat with amiable South African Winemaker Paul Cluver.
In lieu of a quiet place to record a video interview, we retired to the comfort of my hotel room at White Oaks where the only ambient sounds were the sounds of some rather lovely chirping birds from outside.
This time we focused upon what the term “cool climate chardonnay” means to him and how it relates to the wines he makes in South Africa’s Elgin region…
