This week I had the distinct pleasure of tasting the Kilchoman Machir Bay Islay Single Malt with Kilchoman founder/managing director Anthony Wills.
Kilchoman (Islay’s Farm Distillery) is a most interesting concept; when it was founded back in 2005 it was the first new distillery on Islay for some 124 years, rather astonishing when one thinks about it.
I spoke to Anthony about his background in the single cask bottling business, what drew him to Islay, the biggest challenges in setting up such a project, and the principles behind the Machir Bay bottling we were tasting.
The Kilchoman Machir Bay Islay Single Malt is currently available through the LCBO for $90.25 a 700ml bottle, and is a fascinating introduction to Islay malts.
