This week sees us sit down with Cave Spring winemaker Gabriel Demarco to taste through an exercise in controlled oxidation with his 2018 “Prova” Riesling, available right now for $39.95 from the Cave Spring webstore.

It’s another really interesting wine for Cave Spring, and one that I highly recommend, especially if you have a fondness for wines influenced by the occurrence of flor. Really delightful.
