Jérôme Villaret is one hell of a host. As the head of the Conseil Interprofessionnel des Vins du Languedoc (and the IGP Sud de France) he is responsible for hosting over 100 journalists annually for the superb Terroirs & Millésimes week.
He was kind enough to take a little time out of his hectic schedule to join me on the stunning (but windy) battlements of the medieval city of Carcassonne for a chat about the Languedoc wines he cares so passionately for.
