After a week in Carcassonne (and surrounding environs) tasting a vast swathe of wines from the many appellations that call the region home, I had most certainly formed a number of opinions regarding the many bottlings on offer.
Occasionally guilty of being a little too extreme in the aforementioned opinions, I have come to learn that a bit of intimate discourse with my fellow wine scribes often helps me to temper some of my rougher critical edges.
