Sami Tamimi is a Palestinian Arab who moved to London and met Yotam Ottolenghi there, a Tunisian Jew, with some Italian heritage thrown in. The two became friends, and have very quickly become a big deal in the London restaurant scene with their Ottolenghi cafés and their restaurant NOPI.

Their third cookbook, Jerusalem, is a bit of a departure for the duo, as they returned to their home city to try and capture the food culture of the ancient (and modern) city. It’s a beautiful and fascinating cookbook, and in the video below, I ask them about it in detail.
