Seeing as we are getting deep into the festive season, this week we begin a three-part deep-dive interview with Guillaume Roffiaen, Chief of Vines and Wines, at the relatively nascent (born: 1976) Champagne house of Nicolas Feuillatte.
In Part One, we explore the history of the Feuillatte co-operative, the house’s forward-thinking philosophies, and the impact of global heating upon the wines of Champagne, particularly those overseen by Guillaume. Trust me, this fellow knows his stuff when it comes to the intricacies of Champagne production, and there’s a lot to take away here.
