I am on my way! Looks lovely. As a child we used to eat pan fried skate wing (a favourite Greek dish) with warm garlicky skordalia that I used to love making. It was delicious. Of course at the time I wasn’t educated about sustainable fishing practices and my family and I were heartbroken when we learned what was happening out there. So, yeh, I’m going to Hooked and buying some Longhorn Skate and will cook it for my parents as an ode to preserving all the good things in life. Inspired! Thanks for this 🙂
I’ve only cooked skate once – shortly after getting married, my husband brought home a skate wing that hadn’t been filleted. That was first and last time.
