Welcome Spring and celebrate the season with a traditional Easter feast… succulent roast ham, platters of spring vegetables and all the trimmings. It’s always a joyous occasion and, of course, at All The Best we can make it extra easy for you.
Every week small local producers, who raise heritage breeds of pigs, supply the All The Best Kitchen with hams of outstanding flavour and texture, prepared and smoked following traditional custom.
Each Easter ham is lavishly coated with a mixture of finely chopped fresh herbs then roasted in a slow oven and basted diligently with a honey citrus glaze. We serve our hams, hand-sliced from the bone to preserve the succulent texture and delicious flavour.
This year we offer with our hams, a classic sweet/tart Cumberland Sauce. Originally published in the 1700s by English cookery writer, Hannah Glasse, the recipe reappeared in the mid nineteenth century named for the Hanoverian Duke of Cumberland who particularly enjoyed the sauce served with ham, lamb and game.
Cumberland Sauce
1 orange (Navel or Seville, if available), scrubbed
1 lemon, scrubbed
¼ cup (60 ml) red currant jelly
½ cup (125 ml) medium tawny Port
1 tbsp (15 ml) orange juice
1 tbsp (15 ml) lemon juice
½ tsp (2 ml) ground ginger
½ tsp (2 ml) dry mustard
¼ tsp (1 ml) freshly ground pepper
Using a sharp vegetable peeler, remove the zest from the orange and lemon and cut into very thin slivers. Cut the slivers into ½-inch pieces. Blanch the citrus zest in boiling water for 20 seconds. Drain and rinse. Repeat the process twice more with fresh water each time. Set blanched citrus zest aside.
In a small saucepan set over medium heat, combine red currant jelly and Port. Whisk together until jelly has melted.
In a small bowl whisk together citrus juices, ginger, mustard and pepper until smooth. Add to redcurrant/Port mixture and bring to a simmer. Cook, stirring until sauce has reduced and thickened to coat the back of a spoon. (Take a spoonful and set in the refrigerator to test whether the sauce sets to soft jelly consistency.) Stir in blanched citrus zest and set aside to cool. Makes about ½ cup/125 ml
