Chef Daniel Humm  told me the current waiting list for a reservation at Eleven Madison Park, the New York restaurant he owns with his front of the house partner Will Guidara, is now measured in years, rather than months. Humm and Guidara took what had been a moderately successful Danny Meyer restaurant and brought it up to a Three Star Michelin, Four Star New York Times and Top Ten San Pellegrino Best Restaurant in the World over the last few years. Humm was in Toronto this week as part of his duties as spokesperson for Victorinox knives, a company he hold dear to his heart – not just because, like him, its Swiss, but also because the very first set of knives was made by the firm.
