Chuck Hughes was in Toronto this week promoting his Garde Manger Cookbook, which features favourite recipes from his Montreal restaurant of the same name. Riding the crest of fame brought on by the success of his TV show, Chuck’s Day Off, Hughes talked to GFR about the book and the circumstances that brought it about in the video below, including the new generation of Montreal restaurants that have captured the world’s attention in the last decade, his hero Madam (Jehane) Benoit* and the work he does for Hellman’s Real Food Movement.

*Hat tip to The Cookbook Store’s Alison Fryer, who pointed out to me how impressed she was at Hughes’ tribute to Benoit at the 2011 Canadian Culinary Book Awards, where the French language edition of the Garde Manger Cookbook won a silver medal.
