Their approach to winemaking is low-intervention, embracing natural processes such as wild fermentation with ambient yeast, avoiding commercial yeast additions. They steer clear of filtration or clarification, opting for minimal to zero sulfur addition and shunning any colour or flavour manipulation. In their quest for purity and authenticity, they use neutral vessels for aging, primarily concrete eggs, and avoid new oak barrels. The result is a range of wines that are characteristically lower in alcohol, fresher, brighter, and bone-dry, with residual sugar typically around 1g/L. These wines often shine brightest when served slightly chilled, including the reds, which are best enjoyed below room temperature.
