Haselgrove focuses on small batch production, allowing the blending of small parcels of wine to create high quality wines. Significantly, the small batch facilities allow the winemakers from Haselgrove to separate their small parcels of fruit until the final blending process, displaying terroir of the vineyard and seasonal variation in the bottle.
The First Cut Story
The principle behind our first cut wines revolves around the winemaking term ‘first cut’ in which during the pressing cycle the softer free run juice/wine is separated from the second cut or pressings. This principle flows through to the style of First Cut wines, producing wines with great drinkability well suited to be enjoyed with food or as a drink with friends.
Tasting Notes
Aroma: Lifted, bright and Fresh aromatics of cassis and cranberry with developing tones of bramble and dried tobacco leaf and hints of menthol and subtle cedar oak
Palate: The palate demonstrates all the hallmarks of great Cabernet. Mid weight yet structured, bright fruit with balancing acidity and a fine line of tannin creating a long dry finish, ideal for food.
Vineyards: Selected from multiple sites through the McLaren Vale region, each displaying a unique site character which integrate well to form the final blend. Willunga area offers fruit with dark berries and hints of fennel with chewy tannins while McLaren Flat offers lifted floral notes and finer tannins and Blewitt Springs offering blueberry fruits and delicate structure.
Winemaking: De-stemmed to a combination of open and static fermenters, Left on skins for between 6-8 days and pumped over 2-3 times per day. Pressed off skins directly to oak to finish secondary fermentation. Aged for 12 months in 10% new and 90% older French Oak before bottling.
