Briefly available via eCommerce and Destination Collection last year, this textbook example of Petit Chablis is now being released through Vintages this Saturday, April 17.

Highly rated by both international and national wine reviewers, this perfect for spring and summer Petit Chablis hails from a well-respected clan in Chablis – the Dauvissats. A relatively new producer (1987), Agnès and Didier have been joined by their son Florent – the three of them produce beautifully crafted Petit Chablis, Chablis and Chablis 1er Cru Beauroy from their domaine in Beines. The family practices sustainable agriculture and lets the Chardonnay grapes speak for themselves.

The grapes for this Petit Chablis were sustainably grown on 3.5 hectares of Portlandian soils composed of harder, compact, fine-grained limestone tinged with a bit of clay. The soil level below is full of marine sediments and small fossilized oyster shells. The vines themselves are over 25 years old. Traditional vinification in thermo regulated vats: alcoholic fermentation, malolactic fermentation, racking, and fining. The wine is left on the lees for 6 to 12 months. Lightly filtered and bottled at the domaine. If pairing with French cuisine: enjoy as an apéritif with gougères or with creamy main course dishes such as chicken in cream sauce. 150 cases available for us lucky Ontarians.

Meanwhile, as a bonus offering and the perfect complement to the Petit Chablis is the Chablis 1er Cru Beauroy 2018. This jewel of the Dauvissat crown is currently available in very limited quantities online and at the France Destination Store in Ottawa.

The grapes are grown on a premium south-west facing slope with vines that are over 35 years old. Traditional vinification. Very elegant nose of almonds, hawthorn and hints of rose. On the palate, round, and fleshy with a long, buttery, nutty finish. A spectacular 1er Cru, best enjoyed with finest Canadian oysters and local goat cheeses. If pairing with French food – ideal with foie gras, sweetbreads, scallops in a saffron broth, crispy coated fish or even with a classic Tarte Tatin for dessert. Only 2 cases left online and one case in Ottawa.
