The Draw:
An iconic Chardonnay that won’t break the bank. Chablis has always been considered a value in the world of Burgundy, but in a benchmark year like 2018 the value is even more striking. A bright, citric nose with a whiff of that classic, regional, chalky minerality. The palate conveys that fresh core with a concentrated, textured frame. Yellow fruits of plum, lemon and apple fill the basket. It’s more than textbook Chablis, it’s practically the book publisher.
The Winery:
This historic domaine began in 1959 with winemaker William Fèvre himself, who descended from a family who had lived in the region for over 250 years. From modest beginnings of 7 hectares, the property acquired new vineyards in established, premium terroirs. It is now one of the largest land-owners in Chablis with 78 hectares; 15.9ha are Premier Crus and 15.2ha are Grand Crus. Though not officially organic, the vines have been cultivated using organic methods for several years. The estate has obtained “High Environmental Value” (HVE) status, the highest level of environmental certification.
Pairings and Tips:
Most people think of crisp whites in the Spring… and you’re not mistaken, it is Winter at the time of this writing. But thankfully, shellfish and oysters are almost always available. Even though our celebrations may be a little more restrained in the 2020 holiday season, treat yourself to some simple hors d’oeuvres, fruits de mer, and crack a bottle of well-chilled Chablis. It’s the perfect kind of pairing to transport us to another place and time.
