Rob Firing loves squash so much he wrote a book about it. The Everyday Squash Cook, co-written with Ivy and Kerry Knight, is a distillation of Firing’s passion for what he calls, in its subtitle, ‘The World’s Most Versatile Superfood’. Both a field guide and a manual of technique, The Everyday Squash Cook is full of recipes for every season and palate, using all manner of curcubita from acorn to zucchini. It’s comprehensive and exhaustive. It’s also, like its authors, a lot of fun, and mixes traditional recipes with innovative applications from burgers to brownies. In the run-up to Canadian Thanksgiving, I met Rob Firing to shoot the video below about his squash cookbook in the Toronto offices of HarperCollins, where he is the head of their publicity department, and more used to arranging interviews with Jamie Oliver or Nigella Lawson than being on the business end of a camera himself.
