What with it feeling as if another new cookie-cutter independent restaurant is opening every three and a half hours these days, it really is damn refreshing to see a young entrepreneurial couple like Wayne and Evelyn Wu Morris, both very much enthused and up ready to bat for a dining concept that is both original and, I’ll admit, wholly intriguing.
Their (hopefully) soon to open Borealia takes its inspiration from the historical food of the natives and early settlers, immigrants of the home of the beaver, the land of the free. That would be Canada… a country almost named Borealia.
