Jennifer Gittins and Michael Van Den Winkel have been the Yonge and Eglinton restaurant scene’s super couple since the mid-90s. First with Stork on the Roof, and for the last five with Quince Bistro, which recently went through a major renovation and expansion. I was lucky enough to catch the couple on a (rare) day they were closed for lunch: Van Den Winkel was guiding his kitchen in preparation of one of Quince’s legendary Rijsttafel dinners, an explanation of which is included in the video we shot below. In good spirits, and with a laid-back, relaxed demeanor that matches the tone of their ingredient-driven casual restaurant we chatted about their philosophy of hospitality and the changes they’ve seen and responded to along their strip of Yonge Street.
