In 2011 American chef Chad Kubanoff and his wife Thuy established Back of the Bike Tours as a way to share their love for the diverse foods and neighborhoods of Saigon, also known as Ho Chi Minh City. The tours provide an opportunity for travelers to see different districts of Saigon while tasting a sample of some of the best street food dishes in the city.
I caught up with General Director and chef Fredrick Wilson to shoot the video below and hear more about how his time living in Saigon has changed the way he cooks and thinks about food.
